How to make the perfect BBQ marinade
A good marinade combines three elements: acid (vinegar, lemon or kefir), fat and a spice blend.
Acid tenderizes the muscle fibers, fat locks in moisture, and spices add deep aroma — all three matter.
Marinating time depends on the meat: chicken needs just 1–2 hours, beef needs 4–12 hours.
Always keep marinating meat in the fridge, and take it out 20–30 minutes before grilling so it comes to room temperature.
